London's Salmon Croquettes

16 oz canned salmon: skinned and boneless

8 oz of crushed buttery crackers

1/2 tsp of dry mustard

1 egg

2 tablespoons of mayo

1 small onion - diced

3/4 cup panko bread crumbs

2 teaspoons of olive oil + 1/4 cup more for cooking

Mix all ingredients except panko

Shape into patties

Dip in panko

Pan fry until golden brown
