









So last night I was in the mood for chicken, and prepared a delicious dish of honey Dijon chicken. I didn't follow a recipe I just free-styled. Anyway, first I bought some rustic Dijon mustard that was imported from France. It had coarse texture which I found to be very flavorful, exactly what I was looking for.
Then I mixed in some ordinary supermarket honey, a little regular yellow mustard to add viscosity, and garlic. Salt and pepper were added and a little bit of olive oil. I whisked it all together and set it aside.
Afterwards, I took the chicken and seasoned it with salt, pepper, and coated it with olive oil. I made sure to season both sides of the chicken to make sure it was extra good:-)
I took out my good ol' Lodge frying pan, and browned the chicken skin side up. Once browned, I took the chicken out and brushed the sauce on it. I baked the chicken on 350 for 30 minutes covered, then for 30 minutes uncovered, basting it every 15 minutes.
I then cooked some brown rice, and wanted to cook some broccoli, but I realized that the broccoli had been in the fridge too long so I pitched it. I had to settle for canned mixed veggies:-(
